Chef Wolastoqiyik Wahsepekuk Indigenous
After completing my studies at École hôtelière de la Capitale, I began working in some of Quebec’s best restaurants. My Wolastoqiyik Wahsepekuk Indigenous roots are one of my main sources of inspiration. I immersed myself into discovering and picking wild plants in Quebec early on, while also researching fermentation techniques from various cultures. My identity and professional experiences helped shape my culinary style, which I would qualify as local and eco-responsible. My Indigenous-inspired cuisine led me to represent Quebec gastronomy in Europe and in Quebec. With my restaurant L'Introuvable, my cooking show Le cuisinier locavore, and my various projects, I am confident in a deliciously gourmet future!
